I care a lot about these Christmas Cookies with Alchermes. I made them specifically to try the oil version of the pink shortcrust pastry, and they were a hit, everyone loved them.
And so, after the enthusiastic approval of my family jury, I baked another batch Sunday afternoon, and yet another one today. The first was to spend an afternoon with mom over a nice cup of tea, and the second for a birthday breakfast. 😊 Yes, around here on December 22nd, we set Christmas aside and focus on the candles! (Even if the birthday person grumbles because there are starting to be too many!! 😄).
I’ve decorated the cookies with the water glaze you already know, as I use it almost every year for Christmas cookies; it’s a very simple glaze that does its job excellently.
Although my decorating skills are minimal, the Christmas gifts turned out nice, so I’m very satisfied with these cookies. 😊 And I keep holding on to that little wish of attending a pastry course; who knows, maybe one day I’ll open that drawer! 💪

Ingredients
- 1 block pink shortcrust pastry
- 1.75 oz water glaze

- Molds for Christmas cookies
Steps
The process requires just a few steps:
Prepare the pink shortcrust pastry (in this case, I made the oil version, but I recommend trying the butter version as well) following the basic recipe.
Proceed immediately to roll out the dough with the rolling pin. It’s not necessary to let the dough rest in the fridge; you can, but for the oil version, it’s not essential.
Cut the dough with Christmas molds (I used only stars and little trees, but of course, you can get creative).
Place the cookies on a baking sheet covered with parchment paper.
Bake at 340-355°F (170-180°C) for 10-12 minutes.
☝ Pay attention to the baking: if they bake too long, that nice golden color of ‘normal’ shortbread can cover the pink color, so I recommend taking the cookies out of the oven as soon as they’re baked but not yet golden.
Decorate as desired with the water glaze.

I dipped some cookies in Alchermes after baking to get a more intense color. They were a hit! I only managed to save six for the photo! (Remember that soaking them makes the cookies a bit softer 😉).
