Ginger Cod Fillets

For today’s release of Light and Tasty, the task assigned to us involves a cod recipe. To cook my cod fillets, which I always keep in the freezer, because they cook quickly and often solve my lunch troubles as a second course or in sauces for pasta, I was tempted by the ginger cod fillet recipe from Giallozafferano, the platform that hosts me. I made some personal tweaks (in particular cooking in a pan instead of the oven) and voilà our fish course ready in 20 minutes. And we loved it! 😊

Ingredients

  • 4 cod fillets (14-16 oz)
  • 1 lemon (juice and zest)
  • 10 g fresh ginger (2 teaspoons, grated)
  • 15 ml extra virgin olive oil
  • mint
  • chives

Tools

  • Pan
  • Grater
  • Spatula

Steps

  • First, prepare the lemon and ginger sauce:

    Grate the ginger to obtain 2 teaspoons of pulp (3 if you prefer a stronger taste).

    Grate the zest of a lemon.

    Squeeze the lemon.

    Pour the lemon juice, grated ginger, a teaspoon of mint leaves, and a tablespoon of extra virgin olive oil into a small bowl.

    Mix the sauce.

  • Lay the cod fillets in the pan and coat them with the sauce.

    👉 For pan cooking, you can also use frozen fillets; I preferred to thaw them by microwaving on the defrost setting for a few minutes.

  • Cook the fillets for about 20 minutes. Start cooking without a lid, then cover them for the last few minutes.

    👉 If you want, you can gently turn the fillets using a spatula to prevent breaking. Using a lid for a few minutes can avoid flipping, ensuring even cooking. Additionally, the ginger remains visible while flipping disperses the sauce (this is mainly a visual matter for photography purposes as the flavor remains unchanged).

  • Serve the cod fillets hot using a spatula, preferably a fish spatula, to avoid breaking the fillets.

  • This occasion allows me to show you two plates from a Richard Ginori fish plate set from 1963. 😊 They are beautiful vintage plates with a golden rim and a different fish drawn on each plate, which my parents received as a wedding gift, preserved intact by my mom for six decades. 🤩 My parents’ anniversary is in a few days… well, it’s time to use these plates, they are so beautiful they deserve to be admired! 😃

Salt-Free Tips

Salt-Free  A primary tip for low-sodium cooking is using spices, aromatic herbs, spicy vegetables, or fruits, all present in this recipe! 😊🤩

If you’re interested in reducing or eliminating salt, always remember to:
▫ Gradually decrease salt so your taste buds can adjust and won’t notice the reduction.
▫ Use spices. Chili, pepper, curry, nutmeg, cinnamon, cloves, cumin…
▫ Use aromatic herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▫ Use seeds. Sesame, pine nuts, almonds, walnuts…
▫ Use spicy vegetables or fruits. Garlic, onion, lemon, orange…
▫ Use my salt-free vegetable granules and gomasio.
▫ Prefer fresh foods.
▫ Avoid cooking in water, prefer methods that do not dilute flavors (grill, foil, steam, microwave)
▫ Avoid bringing a salt shaker to the table!
▫ Occasionally, allow yourself a small indulgence. It’s good for the mood and aids perseverance.
