Gluten-Free Star-Shaped Crackers

Today I offer you some gluten-free star-shaped crackers. A simple recipe made with only four ingredients, which can become a scenic Christmas-themed finger food. Sometimes it takes very little, even just a spice to add that extra touch of color. 😊

After last Monday’s Christmas proposals, today the Light and Tasty Team has thought of suggesting some finger food ideas. You can make them yours during the upcoming holidays and especially for New Year’s Eve when a rich and colorful buffet always makes a good impression. As always, you will find the recipes of my colleagues from the Team listed and linked at the end of this recipe, which I will now tell you all about.

These are gluten-free crackers made only with whole grain rice flour and potato starch, with very little oil and flavored with herbs and some spices (and colored with turmeric).

Regarding gluten-free recipes, it’s important to say that I am not particularly experienced, as I do not have intolerance issues at home, it has never been a priority for me to attempt recipes that, as is well-known, can be tricky to manage without some experience. However, I am curious and like to try recipes that I am unfamiliar with and ingredients that are unusual for me, and for a while now, I wanted to try making, if not bread (I’ll think about that later!) at least breadsticks or crackers. Sure, it’s true that rice flour isn’t particularly unusual, those intolerant to gluten know it well, so much so that there are plenty of gluten-free crackers made by more expert hands than mine available online. But I assure you that even my crackers turned out quite well 😊 especially… the second time I made them!

Ahhh yes yes!! I had to make them twice! (Ahem… ‘good the first time’ doesn’t always work! 😃). Come on, read the recipe, I’ll tell you everything in the procedure!

Ingredients (for 28-30 gluten-free crackers)

It’s a small batch, doubling the quantities might be a good idea. 😉

  • 3/4 cup whole grain rice flour
  • 1/4 cup potato starch
  • 1/3 cup water
  • 1 tbsp corn oil
  • herbs (as desired)
  • spices (as desired)
  • spreadable cheese (or ricotta)
  • red and green bell peppers (raw or cooked as you prefer)

Steps

Some useful details to know before starting, especially for those who have never worked with gluten-free dough:

First of all, the structure of the dough is different than what we’re used to, the texture remains floury (because the gluten network does not form, for obvious reasons). I added a video on my Facebook page, where I refer you so you can better see how it looks when kneading.

Additionally, it’s important to know that to achieve crispy and crumbly crackers, the dough must be rolled out as thin as possible. The very thin dough can be cut with a wheel directly on the baking tray and baked like this, without touching anything otherwise it breaks (being, indeed, very thin). Leaving the dough thicker to better handle it is not helpful, because if they are not thin, the crackers become hard once baked, not crispy but just hard. (At first, I thought I had done something wrong, but I confirmed that it’s really a thickness issue thanks to a note in this recipe from the blog Una vegetariana in cucina.)

For this reason, it is preferable not to use rice flour alone but to combine it with other flours (such as chickpea or quinoa flour, as I’ve seen in several recipes) or with corn or rice starch. Since I didn’t have starch at home (and couldn’t find it at the supermarket, incredibly, it was out of stock!!) I decided to use potato starch. This allowed me to leave the thickness slightly higher, just enough to use the star-shaped cutter and still get crispy crackers.

  • Pour all the ingredients into a bowl and knead until you obtain a homogeneous mixture. Initially, the dough appears floury and crumbly.

  • Continue working the dough, possibly transferring it to the work surface or kneading board, adding a little water at a time until the right consistency.

    👉 In total, I used 1/3 cup of water, but it’s good to adjust according to the flour’s water demand.

    Roll out the dough with a rolling pin, being careful to flour the work surface, rolling pin, and dough itself well. Or place the dough between two sheets of parchment paper, a very practical and effective method.

  • Cut the dough using a star-shaped cutter (or another preferred shape). For precision, I used a ravioli cutter, among the various star-shaped cutters I have, this was the only one with a scalloped edge, and I liked the idea of making them like this, but certainly, regular cookie cutters can also be used.

    ☝ If the star does not detach using the cutter (see the first of the two photos below), it is good to lift the star with a spatula (not with your hands, or the dough will break) and gently transfer it to the baking tray.

  • Herbs and spices can be added to the dough during kneading or on the surface before baking.

    I made various tests, I also tried brushing the dough with oil before baking, and even distributing paprika and curry on the surface with a moistened finger to make them adhere better. In the end, the best thing in my opinion is to add the herbs and spices to the dough, possibly dividing the dough into parts if you want to use different herbs or spices.

    Bake in the oven at 350°F for 13-15 minutes.

  • Among the various aromas I tried (almost all those I had at home! mint, marjoram, cumin, curry, paprika…) the ones I preferred are: timeless oregano, always excellent everywhere, turmeric because yellow crackers make a really good impression, and my new discovery in the kitchen, lavender. 😋

  • The idea of a Christmas Tree suddenly came to me, in these pre-Christmas days I saw many photos and videos of foods and arrangements in the shape of Christmas trees, from appetizers served on a cutting board to stuffed rolls and desserts, so I thought “why not crackers?”. 😃

    First, I did a couple of tests distributing the crackers on the kneading board, then trying some cutting boards and trays.

    To facilitate finger food, i.e., pretending to be at a buffet and wanting to pick each star with your hands without collapsing the entire tree, I thought it would be more logical to place the crackers next to each other without overlapping.

    But in the end, the dimensions of my cutting board convinced me to overlap them. Also because, in fact, the tree looks more beautiful with the crackers arranged like this, don’t you agree? 😃

  • Finally, the decoration. Very simple. A dab of spreadable cheese and pieces of red and green bell pepper.

    The bell pepper can be used either raw or cooked, I preferred to cook it in the microwave (cooking time for a 150 g bell pepper cut into pieces: 3 and a half minutes on high power). Naturally, only a small part of the bell pepper will be used for decoration.

Salt-Free Tips

Salt-Free  Naturally my gluten-free crackers are salt-free. For those who don’t know yet, I cook without adding salt. If you’re curious to know more, I explained everything in this article. 😊

If you are interested in reducing or eliminating salt, always remember to:
▫ Gradually reduce salt, the palate needs to get used to it gradually and should not notice the progressive reduction.
▫ Use spices. Chili, pepper, curry, nutmeg, cinnamon, cloves, cumin…
▫ Use herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▫ Use seeds. Sesame, pine nuts, almonds, walnuts…
▫ Use spicy vegetables or fruits. Garlic, onion, lemon, orange…
▫ Use my salt-free vegetable granules
▫ Prefer fresh foods.
▫ Avoid cooking in water, prefer cooking methods that do not disperse flavors (grilling, foil, steaming, microwave)
▫ Avoid bringing the salt shaker to the table!
▫ Sometimes allow yourself a cheat day. It’s good for the mood and helps you persevere.

If you don’t want or can’t give up salt:
▫ You can still try my recipes, salting according to your habits.
