Halloween Bell Peppers Stuffed with Guacamole

Do you like these somewhat monstrous and somewhat playful bell peppers? They are my Halloween stuffed peppers! ๐ŸŽƒ

For years, photos and videos of carved peppers stuffed with spaghetti, of all kinds, colors, and condiments, have circulated online, a simple Halloween recipe perfect for kids. When my children were young, I used to think of trying to replicate them because those spaghetti hanging from the carved mouth manage to be just monstrous enough to entertain the kids. But my practical mom sense always warned me, and I’d have absurd doubts like: I wonder how difficult it will be for kids to eat spaghetti inside a bell pepper! And how do they twirl them? ๐Ÿ˜‚ And so I always gave up and changed the recipe until the children grew up and the time for childish horror recipes passed.

A few days ago, I bought an avocado to make guacamole.

While preparing the guacamole, I started thinking about the haunted pumpkin cake. (But yes, you already know that sometimes recipe ideas come to me after convoluted syllogisms! ๐Ÿ˜‚). A cake that has nothing to do with guacamole, which I had just shared as the recipe of the day in the Whatsapp channel, and at that moment alone in my kitchen, I was thinking about the web I had decorated it with.

And right there, suddenly, I realized that the guacamole in front of me in the blender glass was the same vomity green color as the web. ๐Ÿ˜‚

From there, the step towards the idea of having the guacamole ooze from the carved mouth of a bell pepper… was very short. ๐ŸŽƒ And luckily, I had some colorful bell peppers in the fridge, yellow, red, and green. Too bad I didn’t have an orange pepper! But oh, you can’t always have everything in the fridge!

So, since the guacamole was all ready, I set up the Halloween bell peppers stuffed with guacamole right there on the spot. How nice are the decisions of a moment!

Ingredients

  • 4 bell peppers (3 to fill and 1 for the sticks)
  • 1 avocado
  • 1 red onion (small)
  • 4 cherry tomatoes
  • Half lemon
  • 1 carrot
  • 1 chili pepper (optional)

  • Chopper
  • Knife paring knife

How to Make Halloween Bell Peppers Stuffed with Guacamole

  • Prepare the guacamole.

    For every detail on how to make it, I refer you to the recipe already here on the blog.

    ๐Ÿ‘‰ This time I used the chopper to speed up, but you can also use a mortar.

    ๐Ÿ‘‰ The chili is optional, to be considered if there are children among the diners.

  • Assemble the Halloween Stuffed Peppers:

    Cut off the peppers’ caps.

    ๐Ÿ‘‰ Prefer peppers that are not too large (5.3-6.3 oz each).

    Remove seeds and filaments and turn the peppers into small bowls.

  • Using a pointed knife, like a paring knife, carve the peppers with the traditional Halloween pumpkin decoration.

    The eyes and nose are very easy, just carve out triangles.

    For the mouth, you can be creative, carving it in a zigzag pattern like on this yellow pepper:

  • Or you can carve teeth, preferably irregular or crooked. ๐Ÿ˜

    ๐Ÿ‘‰ If you find it difficult, you can cut the teeth with the tip of scissors. Or… a simple smile is also fine.

  • Fill the peppers with the desired amount of guacamole, trying to have it ooze from the mouth like vomit. ๐Ÿคฎ๐Ÿ˜„

    Cut a pepper and other vegetables into sticks as you like.

    ๐Ÿ‘‰ I chose a carrot to add an orange touch, but adding some breadsticks would also be appropriate.

    Insert the sticks into the guacamole.
