Honey Glazed Purple Carrots

Have you ever tried honey glazed purple carrots?

I had been wanting to try making glazed carrots for a while, and when I bought purple carrots, this recipe seemed like the right one to showcase them.

While researching this recipe, I discovered that most honey glazed carrots are roasted, so I tried cooking them in a pan. And it turned out well, I’d say. I liked them a lot! 😊

Plus, they’re super impressive!

Ingredients

  • 7 purple carrots
  • 2 tsp butter
  • 1 tsp extra virgin olive oil
  • 1 tbsp honey
  • 1 clove garlic
  • pepper (optional)
  • chopped parsley (for garnish)

  • Knife

Steps

  • Peel or scrape the carrots.

    👉 Since these are organic carrots, I avoided peeling them, washed them, and gently scraped them with a knife.

  • ☝ Be cautious because one of the characteristics of purple carrots is that they release color, both on surfaces and on hands. I recommend working on a washable surface and avoiding cloths or tablecloths.

  • Cut the carrots lengthwise into four parts, or in half if small.

  • Place the carrots in a shallow steel pan (or a non-stick skillet) with a teaspoon of oil + a small piece of butter (about 1 tsp) and a garlic clove halved.

    Cook covered on low heat for 15-20 minutes. Add a few tablespoons of water if needed.

    ☝ The cooking time may vary, obviously, depending on the size of the pieces. To shorten the time, you can also make the recipe by cutting the carrots into slices.

  • When almost done, remove the garlic pieces, and add the remaining butter (another tsp) and the honey.

    Stir the carrots to coat them with the dissolved honey.

    Close the lid and let them absorb the flavors with the heat off for a few minutes.

    Serve immediately garnished with chopped parsley and, if desired, a sprinkle of pepper.

Salt-Free Tips

Salt-Free  If you’re interested in reducing or eliminating salt, always remember to:
▫ Gradually decrease salt, as the palate needs to adjust slowly and shouldn’t notice the progressive reduction.
▫ Use spices. Chili, pepper, curry, nutmeg, cinnamon, cloves, cumin…
▫ Use aromatic herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▫ Use seeds. Sesame, pine nuts, almonds, walnuts…
▫ Use spicy vegetables or fruits. Garlic, onion, lemon, orange…
▫ Use my salt-free vegetable granules and gomasio.
▫ Prefer fresh foods.
▫ Avoid boiling, prefer cooking methods that don’t dilute the flavors (grill, foil, steam, microwave)
▫ Avoid bringing the salt shaker to the table!
▫ Occasionally indulge in a rule break. It’s good for morale and helps perseverance.
