I made these kefir pancakes with strawberry and cherry topping on Sunday morning when I realized I absolutely needed to use some of the excess kefir I’d accumulated. Sometimes I make a lot to turn it into spreadable cheese… which I then don’t make 😀 and I end up with a lot of kefir liquid to use!
Since I love recycling recipes, I had another purpose: to consume the strawberries and cherries that – strange but true – we hadn’t eaten, and they had to be finished by the end of the day. Because it’s not fruit that ‘keeps’ well. 🙂
Finally, the third and last purpose, but not least in order of importance: it was essential to have a great breakfast since it was Sunday!
And we definitely succeeded, these kefir pancakes are really good!

Ingredients
- 7 oz kefir milk
- 1 cup all-purpose flour
- 1/3 cup sugar
- 2 tbsp milk
- 1 tbsp corn oil
- to taste lemon zest (grated or chopped)
- 1 packet vanillin
- Half teaspoon baking powder (optional)
- 5 oz strawberries
- 5 oz cherries
- 4 teaspoons sugar

Preparation
First of all, prepare the topping. I made two, one with strawberries and one with cherries.
For the strawberry topping: wash and cut the strawberries into pieces, place them in a microwave-safe dish (I used Pyrex), and cook them for 3-4 minutes on high power, depending on how soft you like them.
For the cherry topping, I refer you to my specific recipe (HERE), but essentially the procedure is similar to the one just given for the strawberries, except that cherries have pits so you’ll need to decide whether to pit them or not, your choice. 😉
Make the kefir pancakes by doing the following:
Pour the kefir, oil, and sugar into a bowl and mix with a spoon.
NB: as always, remember that if you’re not used to using kefir, you can substitute it with plain yogurt.
Add the flour and (if desired) the baking powder (*).
NB: I don’t usually use all-purpose flour, but during the lockdown, I found only that for a period, and I still have a leftover pack that I’m using for desserts. You can safely use type 0 flour, or another type, you’ll see that the pancakes will turn out great with any flour.
Flavor with the vanillin and lemon zest, or just one of the two, your choice.
Adjust the batter density by adding milk.
Depending on the type of flour used and the consistency you want to achieve, you can add 2-3 additional tablespoons of milk, always considering that the batter should be moderately dense. Like this:
Cook the pancakes on a lightly buttered non-stick crepe pan for 1 minute, or a little more, per side. Be careful with the heat, which should be medium-low.
Serve the pancakes hot, stacked, and pour one or two tablespoons (or your preferred amount) of strawberries and cherries with their juice over each stack.

(*) No Baking Powder Version
I indicated the baking powder as optional because I tried making these kefir pancakes both with and without it, trusting that the kefir alone would make them soft anyway. It’s undeniable that they puff up more during cooking with baking powder, but I assure you that they turned out really well even without it, so much so that I served them all together, and nobody noticed! 😀
