By popular demand, here is my apple cake. A quick, simple, and even light recipe. 😀
The recipe for this apple cake is handwritten by me on a little piece of paper that I’ve kept for decades.
It’s a recipe I used to use as a go-to, starting with 1 egg, sugar, milk, and flour (the bare minimum for a cake) and varying an ingredient each time (for example, pears instead of apples, or adding raisins, or coconut flour) I would get different cakes even though the base was always the same simple recipe.
Now, after many years of… let’s call it neglect 😀 I picked up one of my old recipe notebooks to find a classic apple cake to please my husband, who had been asking me insistently for a week to make apple cake – yes, I hadn’t made one in years and he missed it!
When I opened the notebook and saw it:
there was no doubt, an easy, low effort, quick recipe to prepare… considering it was almost midnight… all important things to consider!
But of course, I made a few small changes to the recipe as written in the notebook: first, I reduced the sugar a bit, used just one apple so the cake wouldn’t be too moist, and used kefir instead of a glass of milk, since I have an excess of kefir almost every day (those who don’t produce kefir can use milk or regular plain yogurt).
And then I used a flavoring… mmmmh… which I’ll reveal later! 😃

- 1.6 cups All-purpose flour
- 0.65 cups Milk kefir (yogurt)
- 0.4 cups Brown sugar (+ 1 tbsp for the surface, optional)
- 3.5 tbsp Vegetable oil
- 1 Egg
- 2 tbsp Sambuca
- 1 Apple
- Half packet Baking powder

WW Propoints Diet Info
If you follow me on the Facebook page, you already know that the latest news is that… (for a whole two days!) I’ve started a diet. 😀
I’ll talk about the reasons that led me to this decision, and the diet I’ve decided to follow (the Weight Watchers Propoints from the blog Mangia senza Pancia) in the next few days in a dedicated article (Update: here it is, this one).
For now, I’ll just say that I’m really happy about the decision I’ve made and that… ah ah, it seems absurd to say, but it’s true… this apple cake gave me an extra boost to start on the right foot! I made it Sunday night, already thinking “but I’m aware that after years of not making it and right now I make an apple cake I can’t eat, on the first day of dieting!”. But then when I calculated the ProPoints points, I found out that a slice fits perfectly into the scoring, a 2.5 oz slice (yes, I’m precise) is exactly worth 5.5 points (5.6 if you add sugar on top), and thus accompanied by the right amount of milk, or yogurt or kefir, and some fruit, for me it’s perfect.
Perfect for starting the day in a good mood, even while dieting! 😀
