To welcome you back, or rather our “dear friends, welcome back among us,” we have decided to offer you an aperitif.
Something to nibble on prepared by my colleagues, which you will always find in the links at the end of the recipe, and something to drink, which I’m offering you: a non-alcoholic cocktail with elderberry syrup, two mint leaves, and a few pieces of fruit.
It’s a refreshing drink, very simple to prepare, which I tried in two versions, one sweet and one lighter but, I assure you, equally excellent.
So excellent that here the husband… preferred it! (😮 non-alcoholic, okay, but also light and he preferred it??? Yes!!! 😃💪).

Ingredients for 2 glasses
- Half peach (ripe) (approximately 50-60 g)
- 2 oz elderflower syrup
- 2 oz non-alcoholic white bitter
- 5.5 oz sparkling water (or sparkling lemonade)
- 1 lemon (small)
- A few leaves mint
- A few cubes ice
Tools
- Mortar marble with pestle
- Glasses glass for water and soft drinks
How to prepare the non-alcoholic cocktail with elderberry syrup and fresh fruit
Peel the half peach and cut it into small pieces.
Crush some mint leaves in the mortar with 2 tablespoons of lemon juice and add the peach pieces.
Place everything (peach pieces, lemon, and mint) at the bottom of two glasses.
Pour 1 oz of elderflower syrup and 1 oz of white bitter into each glass.
Top up with 2.75-3.5 oz of sparkling water (or, for a sweeter version, with sparkling lemonade like lemon Schweppes or Lemonsoda).
Finish with 3 or 4 ice cubes in each glass.
Garnish with a few mint leaves.
Serve immediately. 😋
VARIATIONS: in the title, I generally used “fruit” and not “peach” because this cocktail is also excellent with other types of fruit (even mixed) like strawberries, apricots, kiwi, raspberries, melon, grapes. I might even try it with pear, what do you think? 😊
