Peach and Lemon Ice Cream

«I was really fed up with the heat, so I peeled two peaches and quickly made a homemade ice cream that turned out to be truly refreshing.» These are exactly the words I wrote in a Facebook post on the day I whipped up this peach and lemon ice cream when I was craving ice cream but didn’t want to leave the house just to buy some. So what do you do in these cases? You make it! 😃 All you need are just two peaches and you’re good to go! 💪

Initially, I thought of making a sorbet (just peaches and water), but since it was snack time, and the son was home and a cool snack would do him good too, I used milk, so the sorbet turned into a peach ice cream with its albeit small protein contribution, which doesn’t hurt the teenager at home.

Ingredients

  • 2 peaches (220-250 g)
  • 1/4 cup sugar
  • 1/5 cup milk
  • 1/3 oz lemon

Tools

  • Ice Cream Maker
  • Immersion Blender

Steps

  • First, peel the peaches and cut them into pieces.

    Place the pieces in a tall, narrow container, add sugar, lemon juice, and milk.

  • Blend everything into a puree.

    Pour the mixture into the ice cream maker and turn it on.

    My ice cream maker has two operating modes, compact ice cream, and soft ice cream. For fruit ice creams, I usually use the soft ice cream mode, designed for soft ice creams, fruit ice creams, and sorbets. (*)

  • In about 15 minutes, my peach and lemon ice cream was ready. Here it is:

  • (*) As you already know, my ice cream maker is a model with a refrigerant disc, it’s many years old and no longer in production (and unfortunately, because it’s very good despite being one of those without a refrigeration motor). Now refrigerant discs are no longer used, replaced by the entire refrigerant bucket, which is a bit bulkier to put in the freezer, but has the same operating mode (I’ve selected this model for you, which you can also find in the Tools list).

FAQ (Frequently Asked Questions)

  • Can I make this ice cream even if I don’t have an ice cream maker?

    Yes, it is possible to make ice cream without an ice cream maker. Proceed as follows: put the mixture (in this case, the peach smoothie) in the freezer, preferably in a shallow and wide container, stir it every half hour (to break the frozen crystals), repeat several times, always every half hour, until the desired density is reached. Of course, this way the realization time is longer, but the ice cream turns out well just the same.
