What can I say, these pineapple and cheese skewers with green olives and sweet and sour peppers are out of this world. That’s it, I have nothing more to add!! 😄
I was skeptical. Not to mention my husband, who automatically refuses to taste any dish with pineapple in savory recipes. 😂
But the Light and Tasty recipe of the week loomed, and… well, what can I say, it’s not my fault if the person deciding the themes (😎🤭) chose pineapple for today! Come on, just one taste, do me this favor just to tell me what you think, please!

It turned out that these pineapple and cheese skewers are delicious! 🤩 One bite leads to another, to be eaten in one go, all four ingredients together.
It’s a fresh, tempting finger food, a great companion to appetizers or bubbly drinks, which truly surprised us.
We finished all the sample skewers. And then I made more, and we finished those too! Oh yeah!

Ingredients
- pineapple
- string cheese
- green olives
- sweet and sour pickled peppers
Tools

- Cutting Board

Steps
Peel the pineapple, slice it, and cut the slices into pieces.
Cut the cheese into pieces (roughly the same size as the pineapple cubes).
👉 I used a string cheese like galbanino, but a mild provolone or caciotta works well too.
Cut the green olives in half.
Cut the sweet and sour pepper strips into squares.
Assemble the skewers alternating pineapple, cheese, pepper, and olives as you like.
👉 Half an olive is, in our taste, the right amount (a whole one overwhelms the other flavors).
👉 The peppers I used are sweet and sour pickled, they pair very well with this combination of flavors.
Serve the pineapple skewers arranged on a serving plate or, for a more scenic look, skewered into a base made by wrapping a half lemon, or half orange, or half apple, or half pineapple with foil (you can decide the size of the fruit according to the number of skewers to serve).

Salt-free Tips
Unfortunately, there are no low-sodium alternatives for the cheese and olives (apart from low-salt mozzarella that is sometimes found in supermarkets). But for the sweet and sour peppers, there is a low-sodium alternative: make them yourself. 😀 While waiting to share the recipe here on the blog (I’m missing this homemade version at the moment), I’ll leave you the one for air-fried roasted and marinated peppers, would you like to try them?
If you are interested in reducing or eliminating salt, always remember to:
▫ Gradually decrease the salt, your palate needs to get used to it slowly and shouldn’t notice the progressive reduction.
▫ Use spices. Chili, pepper, curry, nutmeg, cinnamon, cloves, cumin…
▫ Use aromatic herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▫ Use seeds. Sesame, pine nuts, almonds, walnuts…
▫ Use spicy vegetables or fruit. Garlic, onion, lemon, orange…
▫ Use my salt-free vegetable granulate and gomasio.
▫ Prefer fresh foods.
▫ Avoid cooking in water, prefer cooking methods that don’t lose flavors (grilling, paper baking, steaming, microwave)
▫ Avoid bringing the saltshaker to the table!
▫ Occasionally allow yourself a treat. It boosts mood and helps perseverance.
If you don’t want or can’t give up salt:
▫ You can still try my recipes by salting according to your habits.
