Pineapple and Lemon Smoothie, Fresh and Refreshing

Perfect complement to the previous article, this pineapple and lemon smoothie deserves a recipe all its own. 😍
First of all, because more than a shake, it is a drink, more suitable for drinking than eating with a spoon like the previous three shakes.
And also because it didn’t turn out well on the first try, unlike the other shakes, and thus needed a revision, and more time for reworking. Ahh, sometimes it’s the simplest things that challenge me!! 😅

The first time I made this pineapple and lemon smoothie, I didn’t like it at all, I even told you on the fb page (you have to be honest, right? 😀).
I didn’t give up because I was sure it had to turn out good!, and I redid it with some very small variations, achieving a completely different result.
It’s amazing that two small differences, so small, could have led to almost opposite results, yet that’s what happened to me.
Here are the two differences: 1, the first time I added a slice of lemon, this time instead of the whole slice I just used a couple of teaspoons of juice; 2, the first time I used room temperature pineapple while this time I cooled it in the freezer before using it.
The difference between the two shakes was significant: the first one was bitter, although the lemon slice was peeled alive – so I was sure that bitter taste didn’t come from the white part of the lemon, which wasn’t there! – and despite the addition of sugar and agave syrup, whereas the second was surprisingly good with a pleasant pineapple flavor.
Moreover, blending it cold, the pineapple blended much better and didn’t produce all those fibers that the previous time had wrapped around the immersion blender blade.

I am sure there is a scientific explanation for the difference between the first and second version of my pineapple and lemon smoothie, but here in this house, the family “scientists” are the males, who don’t want to deal with cooking at all; therefore, I have to be content with accepting the result obtained and take it as good.
Ahh Ahh!! but indeed it is!!! It’s good!!! And refreshing!!!

Ingredients

  • 4.25 oz pineapple
  • 0.42 cup natural plain yogurt
  • 2 teaspoons lemon juice
  • 4 teaspoons brown sugar (or agave syrup)
  • 1 pinch vanillin

Tools

  • Immersion Blender
  • straws

Steps

  • Peel the pineapple, cut it into pieces, and place it in the freezer to cool for 20-30 minutes.

    👉 It doesn’t need to be completely frozen, but it should be very, very cold.

    After the chilling time of the pineapple, put it in the immersion blender cup and blend it together with the sugar, lemon juice, and 4 or 5 teaspoons of yogurt.

    👉 Adjust the amount of sugar to your taste and based on the ripeness of the fruit. The pineapple I used was sweet, so I put two teaspoons per person, which was enough for me.

    Add a pinch of vanillin and blend until you obtain the finest possible smoothie. If necessary, add more yogurt during blending.

    👉 I prefer to add the yogurt little by little so I can adjust the consistency. In fact, blending yogurt makes it lose creaminess, which is good if you want to get a refreshing drink, perhaps to be drunk with a straw. Instead, to get a creamy smoothie, you can set aside a little yogurt to add at the end, gently mixing it with a spoon.

    👉 If instead of brown sugar you want to use agave syrup, it can be added either during blending or at the end: being semi-liquid, it dissolves very well even with a simple stir.
