We like this quiche with peppers, zucchini, and onion a lot. It is a single dish suitable for a quick lunch, but it also looks good as a second course, having vegetables and egg, making it a complete second course.
But it is also one of the savory dishes that are a must at my children’s birthday parties. It is never missing from the buffet tables because it is always very successful, not among the children (obviously, it has vegetables! And, moreover, in visible pieces!) but among the parents, especially among the dads (really! 😃).

Ingredients
- 1 roll puff pastry (or shortcrust)
- 1 bell pepper
- 1 zucchini
- 1 onion (not too large)
- 2 tablespoons ricotta
- 1 egg
- cooked ham or hot dog (both optional)
- pepper
- 2 teaspoons extra virgin olive oil

Steps
Wash the bell pepper and zucchini and dice them (the bell pepper can be sliced if preferred).
Slice the onion.
Sauté the vegetables in a pan with a little oil and cook them for 5 minutes, 10 at most. They should not be overcooked. Season with some pepper.Unroll the puff pastry and spread the mixture on top.
In a bowl, beat the egg, add the ricotta, and mix it quickly with the egg.
👉 It doesn’t have to be completely dissolved. The ricotta’s purpose here is just to help the egg bind the vegetables, not to thicken the filling as I have done in other quiches, here the vegetables should be predominant.
Pour the egg and ricotta over the vegetables, spread well using a spoon.
Close the edges of the puff pastry and bake at 356-392°F for 20 minutes or until the egg is set and cooked and the quiche is golden brown.👉 Place the baking tray first in the lower part of the oven to ensure the base of the pastry cooks well, then in the final minutes of cooking, move it to the upper part of the oven to complete the browning.
In its original version, this quiche with peppers, zucchini, and onion, as the name suggests, was a vegetarian recipe, that is, without hot dogs or ham.
But if you too, like me, are always looking for ways to get your children to eat vegetables, you can try enhancing this filling as I did today.
Today I tried with a hot dog, on other occasions with cooked ham. But it’s useless… Fabrizio doesn’t like peppers, Flavia doesn’t like zucchini, and both can’t stand onions. In short, no hot dog can save it, and I will have to resign myself, this quiche with peppers, zucchini, and onion doesn’t work with my kids 😃 But… but it’s perfect for us parents! Salt-Free Tips
As with all quiches and savory pies made with packaged pastry, I recommend against adding salt. Even more so in the version with ham and/or hot dogs. ☝
Since publishing this recipe, I have posted several versions of shortcrust and crazy dough here on the blog, which are a healthy and better alternative to packaged rolls (only useful for practicality, not for quality and quantity of fats they contain). If you are interested in reducing or eliminating salt, always remember to:
▫ Gradually decrease the salt, the palate must get used to the reduction slowly and should not notice the progressive reduction.
▫ Use spices. Chili pepper, pepper, curry, nutmeg, cinnamon, cloves, cumin…
▫ Use aromatic herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▫ Use seeds. Sesame, pine nuts, almonds, walnuts…
▫ Use spicy vegetables or fruits. Garlic, onion, lemon, orange…
▫ Use my salt-free vegetable granulate and gomasio.
▫ Prefer fresh foods.
▫ Avoid cooking in water, prefer cooking methods that do not disperse flavors (grill, foil, steam, microwave)
▫ Avoid bringing the salt shaker to the table!
▫ Occasionally allow yourself a break from the rule. It is good for the mood and helps to persevere.
If you do not want or cannot give up salt:
▫ You can still try my recipes adding salt according to your habits.
