I was sure, and so it was: roasted bell peppers in the air fryer are a show. 😊 Super simple to cook, very easy to peel, and delicious with all their great flavor.
Since I changed my air fryer, this is one of the first recipes I tried to test the appliance. I wanted to start with a simple preparation I hadn’t tried with the previous air fryer because it was too small and the heating element seemed too close to the pepper and could burn it quickly. This new air fryer, although only 2.5 liters, seems huge compared to the previous 2 liters, and in fact a pepper fits comfortably in the basket.
I cooked just one, quite large, but you can cook two peppers without problems, also because by turning them several times they brown well on all sides and ventilation is ensured once they soften. I’ll explain all the details in the procedure.

Ingredients
- 1 bell pepper (or 2, if not too large)
- 1 teaspoon extra-virgin olive oil
- 1 teaspoon vinegar

Steps
Wash the bell pepper.
Place the whole pepper in the air fryer basket.
Set the temperature to 392°F and start the appliance.
👉 Initially I set the timer to 15 minutes. Then, since opening the basket to turn the pepper does not stop the timer, I added a few more minutes at the end. The total cooking time can still be judged as you go.
After a few minutes, turn the pepper using tongs (or two spoons).
Repeat after 3–4 minutes, and again until the pepper is soft (and therefore cooked) and nicely charred on every side.
At this point the pepper can already be peeled, as you can see well in the previous photo (the one with the tongs): the skin is already coming off. But it’s still useful to let the pepper rest, covered, for at least half an hour.
Some people leave the pepper directly in the closed basket, I preferred to put it on a plate covered with a bowl so I can show you the juices that form during resting (which would otherwise end up in the basket).
Peel the pepper — a very simple operation.
Collect the juices in a small bowl or cup and emulsify them with one teaspoon of oil and one teaspoon of vinegar (or to your taste).
Cut the peeled pepper and remove the stem and seeds.
Dress the strips with the emulsion and let them marinate (I for about an hour).

Salt-free tips
Not necessary to salt these roasted bell peppers because this method of cooking in the air fryer, especially using the juices produced during resting, preserves all the natural flavor of the pepper. 😉
If you are interested in reducing or eliminating salt, always remember to:
▫ Reduce salt gradually so the palate can adapt slowly without noticing the progressive reduction.
▫ Use spices: chili, pepper, curry, nutmeg, cinnamon, cloves, cumin…
▫ Use aromatic herbs: basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▫ Use seeds: sesame, pine nuts, almonds, walnuts…
▫ Use pungent vegetables or fruit: garlic, onion, lemon, orange…
▫ Use intensely flavored condiments such as vinegar, wine or balsamic.
▫ Use my salt-free vegetable granulate and gomasio.
▫ Prefer fresh foods.
▫ Avoid cooking in water; prefer methods that do not disperse flavors (griddle, parcel, steam, microwave).
▫ Avoid bringing the salt shaker to the table!
▫ Allow yourself an occasional indulgence. It’s good for morale and helps you persevere.
If you don’t want to, or can’t, give up salt:
▫ You can still try my recipes seasoning them according to your habits.
