I was sure of it, and it turned out to be true: the roasted peppers in the air fryer are amazing. 😊 Super simple to cook, super easy to peel, delicious in all their great flavor.
Since I changed my air fryer, this is one of the first recipes I tried to test the appliance. I wanted to start with a simple preparation that I hadn’t tried with the previous air fryer because it was too small, and I felt that the heating element was too close to the pepper, which could compromise the cooking by burning them quickly. This new air fryer, however, even though it’s only 2.5 liters, seems huge compared to the previous 2-liter one, and in fact, a pepper fits comfortably in the basket.
I cooked just one, quite large, but you can cook two peppers without problems, as they get roasted well on all sides by turning them multiple times, and ventilation is ensured as soon as they soften. But in the process, I’ll explain all the details.

Ingredients
- 1 bell pepper (or 2, if not too large)
- 1 tsp extra virgin olive oil
- 1 tsp vinegar

Steps
Wash the bell pepper.
Place the whole pepper in the air fryer basket.
Set the temperature to 392°F and start the appliance.
👉 Initially, I set the timer for 15 minutes. Then, since the timer doesn’t stop when the basket is opened to turn the pepper, I added a few minutes at the end. However, the total cooking time can be assessed on the spot.
After a few minutes, turn the pepper using tongs (or two spoons).
Repeat after 3-4 minutes, and again until the pepper is soft (and therefore cooked) and well roasted on each side.
At this point, the pepper can already be peeled, as seen in the previous photo (the one with the tongs), the skin is already coming off. But it’s still useful to let the pepper rest, covered, for at least half an hour.
Some people leave the pepper directly in the closed basket, I preferred to place it on a plate covered with a bowl, so I can show you the juice that forms during the rest (which would otherwise end up in the basket).
Peel the pepper, a very simple operation.
Collect the juice in a small bowl or cup and emulsify it with a teaspoon of oil and vinegar (or to your taste).
Cut the peeled pepper and remove the stem and seeds.
Season the strips with the emulsion and let them marinate (I did so for about an hour).
They are delicious!!
Salt-Free Tips
No need to salt these roasted peppers because this type of cooking in the air fryer, especially with the use of the juice produced during resting, ensures the preservation of the pepper’s natural flavor. 😉
If you are interested in reducing or eliminating salt, always remember to:
▫ Gradually decrease the salt, the palate needs to get used to it slowly and should not notice the gradual reduction.
▫ Use spices. Chili, black pepper, curry, nutmeg, cinnamon, cloves, cumin…
▫ Use herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▫ Use seeds. Sesame, pine nuts, almonds, walnuts…
▫ Use spicy vegetables or fruits. Garlic, onion, lemon, orange…
▫ Use strong tasting condiments like vinegar, wine, or balsamic.
▫ Use my salt-free vegetable granules and gomasio.
▫ Prefer fresh foods.
▫ Avoid cooking methods that dilute flavors (grilling, foil, steam, microwave)
▫ Avoid bringing the salt shaker to the table!
▫ Allow yourself an occasional indulgence. It’s good for the mood and helps you to persevere.
If you do not want or cannot give up salt:
▫ You can still try my recipes and salt according to your habits.
