My usual Monday weekly column is delayed by a day this week, so today I’m bringing you an extra recipe. From my crowded archive of recipes still to be written (will I ever manage to write them all? I hope so, one day I will!) I dug up these shortcrust cookies with almonds and chocolate, a very simple recipe I photographed a few years ago. These are cookies that are prepared quickly and that just as quickly disappear into the mouths of children—and not only children—which I made for my kids’ afternoon snack when they were still little. Ahhh how time has passed… I now consider it a vintage recipe! 😄
Well yes, in fact it’s almost a grandma recipe, one of those irresistible recipes perhaps precisely because of their simplicity: crunchy shortcrust cookies made from classic shortcrust pastry with just a few ingredients, the classic grandmother staples: flour, butter, sugar, one egg, a bit of chocolate and some almond flakes.

Ingredients
- 1 block shortcrust pastry
- dark chocolate
- almond flakes
Tools
- Cutting board
- Rolling pin
- Knife
- Cookie cutters
- Parchment paper
Steps
Prepare the classic shortcrust pastry following the basic recipe.
Roll out the shortcrust pastry with the rolling pin.
Use cookie cutters in your preferred shapes and cut the cookies.
Line the baking tray with a sheet of parchment paper and place the cookies on the paper ready for baking.
Chop the chocolate with a knife.
👉 Almonds, as an alternative to flakes, can be cut in half lengthwise, and use half an almond for each cookie.
Distribute almond flakes and chocolate over the cookies to taste. Gently press with your fingers to make the almonds adhere to the dough.
Bake the shortcrust cookies in the oven at 356°F for 10 minutes.
