A quick recipe, this shortcrust pastry filled with figs.
I told you just yesterday about the figs I received as a gift and used to make muffins that we really enjoyed.
But what to do with the (many) remaining figs?
Indecisive, I kept them in the fridge until the next day. We all know figs don’t last long.
So, after eating an embarrassing amount 😅, I thought about putting the remaining ones (a kilo or so) in the microwave to cook them. With the vague intent of making a compote to eat on bread for breakfast.
However, while the microwave was running, I changed my mind. And quickly prepared a shortcrust pastry.
I rolled it out, covered half of it with the figs that had meanwhile become cooked-but-not-too-much.
Then I folded it like a pocket, or like a calzone, or like a big shortcrust pastry pocket, you get the idea, and popped it in the oven.
End.
And as always happens with recipes made on a whim, it turned out to be delicious. 😊😋

Ingredients
No weights, this is a recipe that can be made large, small, medium, more filled or less filled, you decide.
I’ll give you more details in the procedure.
- shortcrust pastry (mine with cream)
- figs
- sugar
- lemon

Preparation
As specified in the ingredient list, I used shortcrust pastry with cream, but I have no doubt that any shortcrust pastry will do. If you don’t have a favorite recipe, I’ll leave you some of my shortcrust pastry links below that you can use, and I guarantee they work:
Cook the figs in the microwave:
Open the figs to check that the inside is healthy and that there are no insects.
Place the figs in a microwave-safe container (I used glass).
Add a few slices of lemon.
Optionally, sprinkle with sugar (one or two tablespoons, no more).
Cover with a lid.
If the container you decided to use doesn’t have its own lid, you can use a universal lid, an item I don’t always remember I have 😃 but it’s indeed very useful.

Run the microwave at full power.
I won’t give you an exact cooking time for the figs, as they can be cooked more or less depending on personal taste, and also because while they were cooking, I prepared the shortcrust pastry and got a bit distracted. 😇 From memory, I’d say I cooked them for about ten minutes, doing two five-minute steps and stirring the figs at each stop. To this cooking time, add about half an hour of resting time (the same resting time in the fridge as the shortcrust pastry). (Resting time is a useful phase in microwave cooking).
The appearance of the figs when I used them was like this, as you see in the photo, they were cooked but not overly:
Roll out the shortcrust pastry into two rectangles and distribute the figs over half of them (I forgot to photograph this step, but you get it, right? 🤭).
Fold the empty half over the filled half and seal the edges.
Sugar the surface to taste and bake.
Bake at 355-390°F for 20-25 minutes, depending on how moist the filling is and the usual differences between ovens.
Let cool on a rack and then slice.

Having made them in two different sizes, deciding whether the shortcrust pastry filled with figs smaller or larger one is better is difficult… you have to compete to see who eats more slices! 😄
