Smoked Tuna Carpaccio with Lemon and Orange

Dear friends, good morning! Here is the new recipe, I have for you a smoked tuna carpaccio with lemon and orange, a simple dish that you can whip up in no time to serve as an appetizer or a quick second course. 😀

This week, the Light and Tasty column asked us to propose recipes that help increase our immune defenses. We need to fight off seasonal ailments! Are you also having a cold like me? 😃

And so, what better than vitamin C, the antioxidant par excellence that we all know well? Sure, we know it’s not vitamin C itself that makes us heal, but we know it boosts our immune defenses and helps with iron absorption, which is why we should always have a portion of vegetables or fruit in our meals.

It’s not difficult to include foods rich in vitamin C in meals; it’s mainly contained in fruits and vegetables that we all regularly consume: green leafy vegetables, cruciferous (the cabbage family), tomatoes, and peppers, oranges, mandarins, lemons, kiwis, strawberries. And in winter, oranges, mandarins, or vegetables like broccoli are certainly not lacking. 😊

It’s good to remember that vitamin C oxidizes easily when exposed to air and during cooking (it reduces by up to 70% with cooking), so it’s advisable to consume freshly cut fruits and vegetables – and, in the case of juices, freshly squeezed – without exposing them to air for prolonged periods. Preferably raw or lightly cooked.

And so here’s my recipe for today, a raw recipe that can be prepared in a few minutes and served immediately: smoked tuna carpaccio with lemon and orange. 😋

Ingredients

  • 5.6 oz smoked tuna (thinly sliced)
  • 1 lemon
  • 1 orange
  • 1 tbsp extra virgin olive oil
  • green peppercorns

Tools

  • Knife

Steps

  • Preparing the smoked tuna with lemon and orange is very simple and takes only a few minutes.

    Arrange the slices of smoked tuna on two plates.

    Cut the lemon and orange in half and squeeze the juice directly over the tuna (half a lemon and half an orange per plate).

    Drizzle the tuna slices with the juice.

    Finish with a drizzle of extra virgin olive oil.

  • For a more intense flavor, add a few green (or pink) peppercorns. 😋

  • 😄 Yes, it’s true, I plated it minimally. I only realized after downloading the photos that I could have decorated the plate with a few arugula leaves, or arranged the lemon and orange slices a bit more symmetrically… well, it means I’ll have to repeat the recipe! 😄

Salt-Free Tips

No salt This recipe does not require added salt as the smoked tuna is already salted during production. Therefore, it is always good to check the nutritional values indicated on the label.

On the package of the smoked tuna I bought, the indicated value was 2.5 g of salt per 100 g of product, which, upon research, I found to be the most common value, but I also saw higher (2.8 g) and lower values (yes, they exist! 😉) (0.7 g).

However, I always encourage you to prefer fresh foods, limiting salty foods to only occasional consumption, an invitation I always repeat in my salt-free tips, which are also listed below today:

If you are interested in reducing or eliminating salt, always remember to:
■ Decrease the salt gradually, the palate needs to get used to it slowly and shouldn’t notice the progressive reduction.
■ Use spices. Chili pepper, pepper, curry, nutmeg, cinnamon, cloves, cumin…
■ Use aromatic herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
■ Use seeds. Sesame, pine nuts, almonds, walnuts…
■ Use spicy vegetables or fruits. Garlic, onion, lemon, orange…
■ Use my salt-free vegetable granulate and the gomasio.
■ Prefer fresh foods.
■ Avoid cooking in water, prefer cooking methods that do not disperse flavors (grill, foil, steam, microwave)
■ Avoid bringing the salt shaker to the table!
■ Sometimes allow yourself an exception. It’s good for your mood and helps you persevere.
If you don’t want or can’t give up salt:
■ You can still try my recipes by salting according to your habits.
