Strawberry and Chocolate Cheesecake

I made this strawberry and chocolate cheesecake, or rather strawberry with a chocolate base, on my daughter’s birthday.
It was a hit, my kids loved it.

The idea to decorate it with strawberry sauce was a winning one; in this season, I like to use fresh fruit in desserts, they turn out so good thanks to the excellent, sweet, and fragrant fruit that this season gives us.

Compared to the cheesecakes I’ve made before, this time I tried a base without biscuits, without coconut, without recycling of ring cakes or various desserts, as are usually the bases of my cheesecakes. But… I recycled the chocolate (from Easter eggs). 🙂

This time I wanted to try an idea that is quite popular on the web: a layer of chocolate puffed rice (a kind of ciocorì) that I was sure my kids would like, and especially the birthday girl.

Try it yourself for your kids’ birthday, this strawberry and chocolate cheesecake is recommended, with great enthusiasm, by my daughter! I’m sure all the kids (and some dads 😉) will ask for seconds!

Ingredients

  • 5.3 oz dark chocolate
  • 1.8 oz puffed rice
  • 3 tbsp milk
  • 1 cup fresh whipping cream
  • 3.5 oz mascarpone cheese
  • 2.5 oz cream cheese
  • 1.8 oz powdered sugar
  • 3 tbsp strawberry sauce
  • 9.5 oz strawberry sauce

Tools

  • Mixer
  • Springform Pan
  • Spatula
  • Microwave Oven

Steps

  • Prepare a 9 or at most 9.5 inch springform pan and line the base with parchment paper. Only the base, not the sides.

    Also prepare the strawberry sauce and keep it in the fridge while preparing the dessert.

    Preparation of the base:
    Melt the chocolate.

    I used the microwave but it can also be melted traditionally in a double boiler.
    I broke the chocolate (I used the last remnants of the Easter eggs) and put it in a glass bowl with 3 tablespoons of milk. I microwaved it for a minute, then took it out and stirred. I repeated the operation three times (in the third round half a minute could have been enough, consider it based on your microwave).

    In a bowl, mix the puffed rice with the melted chocolate.

    Spread the mixture on the base of the cake pan leveling it with a spoon.
    Put in the freezer for at least half an hour.

    ☝ Before covering the base with the cream of whipped cream and cheeses, ensure it is frozen or at least well firm.

    Preparation of the cream:
    Whip the cream, sweetened with 50 grams of powdered sugar.

    When the cream is whipped, add the mascarpone and blend again to mix the mascarpone well.

    Then add the cream cheese and blend. Finally, add a few tablespoons of strawberry sauce and blend.

    Spread the cheese cream on the base of puffed rice and chocolate leveling it with the back of a spoon.

    Put in the freezer for at least half an hour.

    ☝ Before covering it with the strawberry sauce, ensure the surface of the cream is frozen).

  • Decoration:
    Decorate the cheesecake with the strawberry sauce, spreading it on the surface and leveling it with the back of a spoon or a spatula.

    Put back in the freezer until the strawberry sauce cools (or freezes).

  • Before consuming this strawberry and chocolate cheesecake, it’s good to let it sit at room temperature for 15-20 minutes.

    👉 The waiting time may vary according to room temperature, it’s preferable not to exceed 15-20 minutes to avoid thawing the chocolate base too much (thawed puffed rice could become gummy).

  • I served my strawberry and chocolate cheesecake with the strawberry sauce semi-frozen, so refreshing with every spoonful. 😋

    We really liked it, but I’m also curious to try, next time, to skip the last step in the freezer and serve the dessert with fresh strawberry sauce, spreading it directly on the already cut slices. Then I want to try making some decorations with melted chocolate. And I also want to try the deconstructed version… in short, I have many ideas and I hope to put them all into practice!
