Stuffed Endive Boats

With these endive boats I wish you a Merry Christmas. 🙂

I really put in a lot of effort to prepare this recipe and photograph it, I really wanted to write it in time for Christmas! And if I’m sitting here writing… wow, it looks like I’m succeeding! 😀

Today I won’t go into long explanations because I have to rush to buy the last presents! as usual, I’m super late pant pant!!! 😀 But this recipe doesn’t need explanations, it’s very simple and the perfect recipe to prepare at the last minute.
If you haven’t decided on Christmas Day appetizers yet, try these endive boats! They make a great impression on the Christmas table because… simple things are always the best. Even at Christmas!!

Ingredients

  • 10 leaves Endive
  • 3.5 oz Quark (or other low-fat spreadable cheese)
  • 1.75 oz Stracchino
  • 4 Walnuts
  • 2.5 oz Pear (about half a pear)
  • Pomegranate Seeds (for decoration)
  • 1 pinch Pepper

Preparation

  • Mix the quark with stracchino using a spoon to obtain a soft cream.

    👉 Those who make homemade spreadable cheese with kefir (or yogurt) can safely use it as a substitute for quark.

    Add two coarsely chopped walnuts to the cheese cream, half a pear (or more, at your discretion) cut into small pieces.

    I preferred to keep the pear with the peel, but it can also be peeled.

    Season with a pinch of pepper.

  • Wash and dry the endive leaves.

    Place 2 teaspoons (0.7-0.9 oz) of cheese cream with pears and walnuts on each leaf.

    Finally, decorate with the remaining two coarsely chopped walnuts and pomegranate seeds, which add a touch of color in perfect Christmas style 🙂

    Suggestion: In the absence of pomegranate, you can decorate with pink peppercorns or even poppy or chia seeds.

  • Serve the endive boats fresh, after resting in the refrigerator for about an hour, but they are also excellent at room temperature.

WW Propoints Diet Info
For those like me who are on a diet 🙂 and are interested in the score for the WW Propoints (I talked about this diet I’m following here), each stuffed boat counts only 0.7 points considering the quark at 0 fat, or 0.8 points with semi-skimmed quark, or 1 point using a light spreadable cheese instead of quark. Happy dieting!!

Without salt We eat low-sodium even at Christmas 🙂 and this recipe is perfect without salt, try it! 🙂

If you’re interested in reducing or eliminating salt, always remember to:
▫ Gradually decrease the salt, the palate must get used to it slowly and should not notice the progressive reduction.
▫ Use spices. Chili, pepper, curry, nutmeg, cinnamon, cloves, cumin…
▫ Use aromatic herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▫ Use seeds. Sesame, pine nuts, almonds, walnuts…
▫ Use spicy vegetables or fruit. Garlic, onion, lemon, orange…
▫ Use my salt-free vegetable granules and gomasio.
▫ Prefer fresh foods.
▫ Avoid cooking in water, prefer cooking methods that do not disperse flavors (grill, parchment, steam, microwave)
▫ Avoid bringing the salt shaker to the table!
▫ Occasionally allow yourself a break from the rules. It boosts morale and helps perseverance.
