Ingredients
- 3 eggs
- 6 oz sugar
- 2 1/2 cups all-purpose flour
- 1/2 cup vegetable oil
- 7 oz jam (or preserves of your choice)
- 3 1/2 tbsp milk
- 1 pod vanilla (seeds)
- Half packet baking powder (8 g)
- powdered sugar (for decoration)
Preparation of the 5-Minute Jam Cake
Preheat the oven to 356°F (180°C) in static mode.
In a large bowl, beat the eggs with the sugar and the seeds of a vanilla pod using an electric mixer until you have a light mixture.
Add the vegetable oil and milk, continuing to beat with the mixer.Incorporate the flour and baking powder, still using the mixer, until you get a homogeneous mixture.
Butter and flour a 9.5-inch (24 cm) diameter cake pan and pour in the prepared mixture (or line it with a sheet of damp and wrung-out baking paper).
Spread the preserves with a teaspoon across the surface of the cake: you should use a thick preserve, not heated or liquefied.Bake the cake for thirty minutes without opening the oven and then check its doneness with a toothpick inserted into the cake, which should come out dry, otherwise extend the baking time.
When it is baked, remove the 5-minute jam cake from the oven and let it cool completely in the pan before transferring it to a serving plate.
Sprinkle it with powdered sugar and serve.
