5-Minute Lemon Cake

Ingredients

  • 2 eggs
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 3/4 cup milk
  • 1 2/3 cup all-purpose flour
  • 1/3 cup potato starch
  • 1 lemon (untreated)
  • 1 packet baking powder
  • powdered sugar (for decorating)

Preparation of the 5-Minute Lemon Cake

  • Preheat the oven to 350°F (static mode).
    Wash the lemon, dry it well, grate its zest, and squeeze the juice from half a lemon.
    In a large bowl, pour the eggs, milk, vegetable oil, a tablespoon of lemon juice, and the grated lemon zest, and mix everything with electric beaters.

  • Separately, mix the flour with the baking powder, potato starch, and sugar, and pour everything into the bowl with the egg mixture, mixing continuously with the electric beaters until you have a smooth and lump-free mixture.
    Grease and flour a 9-inch diameter cake pan and pour in the prepared mixture.

  • Bake for thirty to thirty-five minutes, until inserting a toothpick into the cake, it comes out clean.
    Remove from the oven, let cool, and complete your 5-minute lemon cake with powdered sugar as desired before serving.
