The 80s red mini pizzas were the favorite school snack.
Soft, tomato-topped focaccias, greasy and charred at the edges, tasty and irresistible. They were made in bakeries from leftover bread dough, warm and fragrant in the early morning. You’d bring them to school, and during recess, they gave you the right energy to face the long school days. Very easy to make, starting from bread dough and a good peeled tomato topping, they require a two-phase cooking to make them crispy and golden underneath and very tasty on top.

Ingredients
- 17.64 oz all-purpose flour
- 0.35 oz fresh yeast
- 1.27 cups water
- 17.64 oz peeled tomatoes
- extra virgin olive oil
- salt
Preparation of 80s Red Mini Pizzas
Crumble the fresh yeast in a small bowl and dissolve it with some of the water provided for the recipe.
Place the flour in a large bowl.
Make a well in the center and pour in the yeast dissolved in water.
Start kneading, gradually adding the rest of the water.
Then add 2 teaspoons of salt, incorporate it well into the dough, and finally add 4 tablespoons of extra virgin olive oil, kneading thoroughly until it is well absorbed.
Cover the bowl with plastic wrap or a clean tea towel and let the dough rise for an hour, until doubled.Form dough balls of about 2.82 oz, place them on a tray, and cover with a clean tea towel.
Let them rise for twenty minutes.
After this time, preheat the oven to normal or fan mode at 482°F.
Flatten the balls with your fingers to form mini pizzas and let them rise for ten minutes.Generously oil some baking trays and place the dough discs on them, pressing again with your fingers to make them even thinner and let them rest for another ten minutes.
Crush the peeled tomatoes.
Distribute them on the mini pizzas and finish with a drizzle of extra virgin olive oil and salt.Bake for ten minutes on the lowest shelf, then move the trays to the middle shelf and cook for a couple more minutes.
Remove from the oven and serve your 80s red mini pizzas.
