After Eight chocolates are mint-flavored dark chocolates invented in 1962 in the United Kingdom, created for the British tradition of having a chocolate after dinner at eight o’clock (hence the name), featuring thin sheets of dark chocolate with a creamy mint center that melts in your mouth. The combination of dark chocolate and mint is delicious and irresistible and is recreated in the mousse, which is perfect as a dessert or for a sweet, refreshing break on the hottest summer days.

Ingredients

  • 4.4 oz mascarpone
  • 0.4 cup heavy cream
  • 1.7 tbsp mint syrup
  • 1.8 oz dark chocolate

Preparation of the After Eight Mousse

  • Chop the dark chocolate.
    Place half of the still-liquid heavy cream in a small saucepan.
    Bring the saucepan to the heat until the cream is just about to boil, then turn off the heat, add the chopped chocolate, and stir thoroughly to melt it until you have a smooth, homogeneous cream.

  • Set aside.
    Whip the rest of the still-liquid but well-chilled cream from the fridge with electric beaters.
    Slowly add the mint syrup while continuing to mix, then also incorporate the mascarpone and continue working the mixture until it is firm and homogeneous.

  • Spoon the mousse into small glasses, then cover the surface with the chocolate cream.
    Let it rest in the refrigerator for at least one hour before serving your After Eight mousse.
