Air fryer zeppole are delicious choux pastry desserts typical of Father’s Day, cooked in the air fryer as an alternative to traditional frying.

Ingredients

  • 1/2 cup water
  • 3 tbsp butter
  • 2/3 cup all-purpose flour
  • 2 eggs
  • salt
  • custard (click for the homemade recipe)
  • canned cherries
  • powdered sugar (for decoration)

Preparing Air Fryer Zeppole

  • Pour the water into a saucepan and add the butter in pieces and a pinch of salt.
    Place the saucepan on the stove and when the butter is melted and the liquid is about to boil, add all the flour at once, stirring with a spoon without turning off the heat, until the dough detaches from the sides of the saucepan, forming a film on the bottom and sizzling slightly.
    Remove the saucepan from the heat and let it rest for a few minutes.

  • Add one egg at a time, stirring to incorporate it: initially the mixture is completely unbound, it must absorb the egg well, and only when it does so perfectly, add the second egg.
    Incorporate that well too and you will get a homogeneous and dense mixture.
    Transfer it to a piping bag with a star nozzle.

  • On parchment paper cut to fit your air fryer, create the zeppole: make two concentric circles of dough on top of each other without detaching them, with a diameter of about 2.5 inches, spacing the zeppole at least half an inch apart.
    Preheat the air fryer for a few minutes, then insert the zeppole and cook at 356°F for ten minutes, then raise the temperature to 392°F and let them cook for another ten minutes.
    Fill your air fryer zeppole with custard, canned cherries, and a sprinkle of powdered sugar.
