Apple and Jam Cake

Ingredients

  • 3 eggs
  • 150 g sugar
  • 100 ml vegetable oil
  • 300 g all-purpose flour
  • 2 apples
  • 250 g apricot jam
  • lemon zest (grated from one lemon)
  • 1 packet baking powder
  • powdered sugar (for decoration)

Preparation of the Apple and Jam Cake

  • In a large bowl, use electric beaters to whip the eggs with the sugar until you obtain a light and fluffy mixture.
    Slowly add the vegetable oil in a thin stream while continuing to beat, and add the grated lemon zest.
    Gently fold in the sifted flour and baking powder with a spatula, using delicate movements from bottom to top.

  • Peel and chop the apples into pieces.
    Add them to the mixture.
    Grease and flour a 9-inch springform pan and pour the prepared mixture inside, smoothing it gently.

  • Distribute the apricot jam over the cake in scattered spoonfuls.
    Bake in a preheated static oven at 350°F for about an hour, covering the cake with aluminum foil after forty minutes to prevent the jam from burning and using the toothpick test to check when the cake is done (the toothpick inserted into the cake should come out dry).
    Remove from the oven, let cool completely, and transfer your apple and jam cake onto a serving plate.
    Finish as desired with a sprinkle of powdered sugar and serve.
