The apple moelleux is a dessert of French origin, an incredibly soft and easy-to-make apple cake.

Its characteristic is the unbelievably soft and almost melting texture in the center — a quality that in French is expressed by the term “moelleux,” meaning soft, tender, that melts in the mouth. Ingredients

  • 3 eggs
  • 3/4 cup granulated sugar
  • 7 tbsp butter
  • 3.5 fl oz milk
  • 1 2/3 cups all-purpose flour
  • 3 apples
  • 1 packet baking powder
  • powdered sugar (for decorating)

Preparation of the apple moelleux

  • Melt the butter cut into pieces in a small saucepan over low heat or in the microwave.
    In a large bowl, combine the melted butter with the sugar.
    Add one egg at a time, incorporating it into the mixture before adding the next one.

  • Add the sifted flour mixed with the baking powder little by little, stirring continuously and alternating with the milk.
    Peel the apples and cut them into small dice.
    Gently fold the diced apples into the batter until well incorporated.
    Grease an 8-inch cake pan.

  • Pour the prepared batter into the pan, level it, and bake in a preheated conventional oven at 356°F for 40–45 minutes, testing with a toothpick to check doneness.
    Remove from the oven, let cool and decorate your apple moelleux as desired with powdered sugar.
