The apple omelette is a simple and easy dessert to prepare, light and quick to make.
Great for breakfast or a snack, it is prepared in a few minutes and is a very old recipe of peasant origins, made from simple and inexpensive ingredients such as eggs and apples, almost always present in every pantry.

Ingredients
- 2 apples
- 3 eggs
- 2/3 cup milk
- 1/2 cup all-purpose flour
- 1 tbsp sugar
- extra virgin olive oil
- ground cinnamon
- powdered sugar (for decoration)
Preparation of the Apple Omelette
Peel the apples, remove the core, and cut them into cubes.
Sauté them in a non-stick pan with a little oil for about ten minutes, then turn off the heat and let them cool slightly.In the meantime, separate the egg whites from the yolks and beat the whites until stiff.
Separately, beat the yolks with the sugar, milk, flour, and a pinch of cinnamon.
Fold the egg whites into the yolk mixture.
Pour the mixture over the apples, cover the pan with a lid, and cook over medium-low heat for five minutes.Flip the omelette with the help of a lid and cook for another five minutes.
Transfer your apple omelette to a plate, let it cool slightly, and sprinkle generously with powdered sugar before serving.
