Apulian Flag Potato Salad

The Apulian flag potato salad owes its name to the colors of the ingredients with which it is made.

Tasty and fresh, it is very easy to make and is a perfect cold summer dish for the hottest days.

Ingredients

  • 1.75 lbs potatoes
  • 9 oz tomatoes
  • 1 red onion
  • 1 stalk celery
  • capers in oil
  • basil
  • extra virgin olive oil
  • vinegar
  • salt

Preparation of Apulian flag potato salad

  • Clean the onion, slice it, and place it in a small bowl.
    Cover it with cold water and let it rest for at least half an hour.
    In the meantime, peel the potatoes, place them in a pot, and cover them with cold water.
    Bring the pot to the stove and cook the potatoes for twenty-five to thirty minutes from the boiling point, until they can be easily pierced with a toothpick, then drain them and let them cool before cutting them into pieces.

  • Drain the onion and place it in a bowl with the potatoes.
    Wash the tomatoes, cut them into wedges, and add them to the potatoes.
    Trim the celery and cut it into chunks, removing the strings.
    Add it to the other vegetables.

  • Also clean a bunch of basil with dampened kitchen paper and chop it coarsely.
    Place it in the bowl along with two tablespoons of capers and season everything with a little vinegar, extra virgin olive oil, and salt.
    Mix thoroughly and serve your Apulian flag potato salad.
