Ingredients
- 1.3 lbs chicken breast
- 14 oz peeled cherry tomatoes
- 2 cloves garlic
- 1 chili pepper
- 0.5 cup white wine
- parsley
- pecorino cheese (grated)
- extra virgin olive oil
- salt
Preparation of Arrabbiata Chicken Bites
Cut the chicken into small cubes.
In a large pan, heat a few tablespoons of extra virgin olive oil and add the crushed unpeeled garlic cloves.Add the chicken cubes and let them brown on all sides, then deglaze with half a cup of white wine.
Once the wine has evaporated, add the peeled cherry tomatoes and the chili pepper cut into pieces and seeded, add salt, cover with a lid and let it cook for about fifteen minutes over medium-low heat, stirring occasionally, until the cooking liquid has reduced.Serve immediately, your arrabbiata chicken bites hot, sprinkled with chopped parsley and plenty of grated pecorino cheese.
