Baked Potatoes, Peppers, and Onions

Baked potatoes, peppers, and onions is a tasty vegetable side dish or a delicious vegetarian main course.

A simple dish perfect for accompanying any type of main course, be it meat, fish, or cheese, very easy to make, requiring only to parboil the potatoes first to speed up the oven cooking, it is an almost fridge-emptying dish, tasty and flavorful.

Ingredients

  • 1.5 lbs potatoes
  • 2 red peppers
  • 1 red onion
  • black olives
  • breadcrumbs
  • oregano
  • extra virgin olive oil
  • salt

Preparation of Baked Potatoes, Peppers, and Onions

  • Peel the potatoes and slice them.
    Boil them in already salted water for about ten minutes, drain them and let them cool slightly.
    Wash the peppers, remove the stem, seeds, and fibers, and cut them into pieces.

  • Clean the onion and slice it.
    Put everything in a baking dish and season with extra virgin olive oil, oregano, and a pinch of salt.
    Mix, add some breadcrumbs, and mix again.

  • Bake in a preheated oven at 375°F (190°C) in fan mode for twenty to twenty-five minutes, until the potatoes are well browned, adding a handful of black olives a few minutes before the end of cooking.
    Take out of the oven and serve your baked potatoes, peppers, and onions.
