Baked Puff Potatoes

Baked puff potatoes are a tasty side dish, easy to make and with few ingredients.

Like all potato side dishes, they are perfect for accompanying meat, fish, or cheese dishes, they are soft and fluffy, and they melt in your mouth. They might be confused with duchess potatoes, but they have a softer and fluffier texture due to the presence of milk and egg whites, making them equally soft and irresistible.

Ingredients

  • 1.3 lbs potatoes
  • 1 egg yolk
  • 2 egg whites
  • 3.5 tbsp milk
  • 1.5 tbsp butter
  • 1 tsp instant yeast for savory dishes
  • salt

Preparation of Baked Puff Potatoes

  • Peel the potatoes, cut them into chunks, and place them in a pot.
    Cover them with water, bring to a boil, and let them cook for ten minutes after it starts boiling.
    Drain well and immediately mash them with a potato masher while they are still hot, collecting the puree in a bowl.

  • Add the butter in pieces, stir to melt it with the heat of the potatoes, and also add the milk, mixing thoroughly.
    Let it cool slightly, then add the egg yolk and the instant yeast for savory dishes and mix again.
    Adjust the salt.

  • Beat the egg whites until stiff and fold them into the mixture little by little, stirring gently from bottom to top with a spatula.
    Line a baking sheet with parchment paper and distribute the mixture in spoonfuls.
    Bake in a preheated static oven at 392°F for twenty minutes, until golden brown.
    Remove from the oven and serve your baked puff potatoes immediately, while hot.
