Ingredients

  • 24.5 oz pumpkin
  • 10.5 oz pasta
  • 1 clove garlic
  • 7 oz smoked provola cheese
  • grana cheese (grated)
  • extra virgin olive oil
  • salt

Preparation of Baked Pumpkin Pasta

  • Clean the pumpkin and cut it into cubes.
    Peel the garlic.
    Heat a few tablespoons of extra virgin olive oil in a pot and let the garlic clove brown.

  • Remove it and add the pumpkin cubes and a glass of water.
    Cover the pot with a lid and let the pumpkin cook for fifteen minutes on medium heat, then blend it with an immersion blender until pureed, add salt and let it reduce, still on medium heat.
    Cook the pasta for half the time indicated on the package in salted boiling water.

  • Cut the provola into cubes.
    Drain the pasta, add a few ladlefuls of the prepared pumpkin sauce, the provola, some grated grana cheese, and mix thoroughly.
    Pour a ladleful of the pumpkin sauce into a large baking dish, add the seasoned pasta, the rest of the pumpkin sauce, and sprinkle with grated grana cheese.
    Bake in a preheated oven in fan mode at 356°F for twenty minutes.
    Remove from the oven and serve your baked pumpkin pasta.
