Baked Winter Vegetables

Baked winter vegetables are a tasty side dish, easy to make and very delicious.

A simple dish, perfect to accompany any type of main course, whether it is meat, fish, cheese, or eggs, with nutritious and flavorful vegetables such as potatoes, fennel, broccoli, and pumpkin, for a tasty vegetarian side dish that is very easy to prepare.

Ingredients

  • 2 potatoes
  • 10.5 oz broccoli
  • 7 oz pumpkin (diced)
  • 1 fennel
  • 1 carrot
  • 1 onion
  • oregano
  • breadcrumbs
  • extra virgin olive oil
  • salt

Preparation of Baked Winter Vegetables

  • Peel the potatoes and cut them into thin wedges.
    Wash the broccoli and divide them into florets.
    Wash the fennel and cut it into thin wedges.

  • Peel the carrot and cut it into slices.
    Clean the onion and also cut it into slices.
    Put all the vegetables, including the diced pumpkin, in a bowl and season with a drizzle of extra virgin olive oil, salt, and a bit of oregano.

  • Line a baking sheet with parchment paper and spread the vegetables without overlapping them.
    Bake in a preheated convection oven at 356°F for half an hour.
    Sprinkle with breadcrumbs and let them cook for another five minutes.
    Remove from the oven and serve your baked winter vegetables immediately, hot.

Notes
