Bar Coffee Cake

Ingredients

  • 5 eggs
  • 1.25 cups sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 2.75 cups all-purpose flour
  • lemon zest (grated from one lemon)
  • 1 packet baking powder
  • powdered sugar (for decoration)

Preparation of the Bar Coffee Cake

  • Separate the yolks from the whites and beat the whites until stiff.
    Beat the yolks with the sugar and grated lemon zest with an electric mixer until you get a light and fluffy mixture.

  • Gradually add the milk and vegetable oil while continuing to use the mixer, then add the flour and baking powder.
    Gently fold in the egg whites with a spatula, moving from the bottom up.
    When you have obtained a homogeneous mixture, pour it into a greased and floured 9.5-inch diameter ring mold.

  • Bake in a preheated static oven at 350°F for about forty minutes (after the first half-hour of baking, you can do the toothpick test with a skewer stick that should come out dry when the cake is perfectly cooked).
    Remove from the oven, let it cool completely, and then transfer your bar coffee cake to a serving plate.
    Sprinkle with powdered sugar before serving if desired.
