Barozzi cake is a specialty from the province of Modena, made with dark chocolate, delicious and irresistible.
Flourless, scrumptious and fragrant, it is perfect as a dessert or to accompany a good cup of coffee, served with a dollop of whipped cream or a scoop of vanilla ice cream. A cake with an intense chocolate flavor, with a hint of coffee and rum, crispy outside but with a soft heart that melts in your mouth.

Ingredients
- 4 eggs
- 3/4 cup blanched almonds
- 3/4 cup sugar
- 9 oz dark chocolate
- 5 1/2 tbsps butter
- 1 espresso cup coffee
- 1 shot glass rum
Preparation of Barozzi Cake
Finely chop the almonds in a mixer.
Chop the dark chocolate and melt it in a double boiler with the butter.
Set aside.Separate the egg yolks from the whites.
Beat the whites until stiff peaks form.
Separately, beat the yolks with the sugar until you get a pale mixture, then add the melted chocolate with the butter, the chopped almonds, the espresso cup of coffee, and the shot glass of rum.Finally, gently fold in the whipped egg whites with a spatula using gentle movements from bottom to top.
Once you have a homogeneous mixture, pour it into a rectangular pan lined with parchment paper.
Bake in a preheated static oven at 350°F for half an hour.
Remove from oven, let cool completely, and serve your Barozzi cake cut into squares.
