Boiled stuffed potatoes are a delicious cold dish, easy to make and very tasty.
Potato boats filled with a delicious tuna-based filling, perfect as an appetizer or main course for any occasion. An important aspect in making this recipe is to use potatoes of the same size to ensure uniform cooking.

Ingredients
- 4 potatoes (medium)
- 5.6 oz canned tuna in oil
- 0.5 cup mayonnaise
- 1 bunch parsley
Preparation of Boiled Stuffed Potatoes
Wash the potatoes thoroughly with the skin on, then place them in a pot, cover with cold water, and bring to a boil.
Let them cook for twenty-five minutes from the boiling point.
Meanwhile, clean the parsley with a damp paper towel and chop it finely.At the end of the cooking time, drain the potatoes and let them cool slightly before peeling them gently and cutting them in half lengthwise.
Using a teaspoon, gently scoop out the center, leaving a border of about half an inch on the sides and bottom.
Collect the scooped-out pulp in a bowl and mash it with a fork.Add the drained tuna from its preservation oil, the mayonnaise, and the chopped parsley, and mix thoroughly.
Stuff the potato boats with the prepared mixture.
Decorate with a few parsley leaves and serve your boiled stuffed potatoes.
