Ingredients for Bread and Zucchini Balls

  • 21.2 oz zucchini
  • 7.1 oz stale bread
  • 2 eggs
  • 2.5 oz grana cheese (grated)
  • breadcrumbs
  • seed oil
  • salt

Preparation of Bread and Zucchini Balls

  • Wash the zucchini, trim them and grate them with a coarse grater, collecting them in a bowl.
    Grate the stale bread as well and add it to the zucchini.
    Add the eggs, grated cheese, and a generous pinch of salt and mix thoroughly until you obtain a homogeneous mixture.
    Let it rest in the refrigerator for at least fifteen minutes.

  • Place some breadcrumbs on a flat plate.
    Take the mixture and form, with moistened hands, balls the size of a walnut.
    Roll them in the breadcrumbs, covering them on all sides.

  • Heat plenty of seed oil in a deep-sided pan and fry the balls, a few at a time, turning them on all sides so they are perfectly golden.
    Remove them with a slotted spoon and let them dry from the excess oil on a plate lined with frying paper or kitchen absorbent paper.
    Serve your bread and zucchini balls immediately, piping hot.

  • Can they be baked?

    You can bake the balls in a static oven at 350°F by placing them on a baking tray lined with parchment paper without overlapping them, drizzling with a little extra virgin olive oil, for about twenty minutes, until golden.
