Ingredients

  • 10.5 oz stale bread
  • 0.85 cup milk
  • 3 eggs
  • 1.75 oz grana (grated)
  • 1.75 oz pecorino (grated)
  • 3.5 oz cooked ham
  • 3.5 oz provola cheese
  • breadcrumbs
  • salt

Preparation of the Bread Loaf

  • Break the bread into pieces and gather it in a bowl.
    Add the milk and let it rest until the bread has softened.
    Add the eggs, grated cheeses, and a generous pinch of salt, and knead thoroughly until you get a compact and homogeneous mixture.

  • Sprinkle a sheet of baking paper with breadcrumbs and pour the prepared mixture on it.
    With your fingers, flatten and shape the mixture to form a rectangle about half an inch thick.
    Fill with cooked ham and provola in the center of the rectangle, then using the baking paper underneath, roll it up to form your bread loaf, closing also the edges.

  • Wrap it in the same baking paper, tightening the sides “like a candy,” and place it on a baking tray.
    Bake in a preheated convection oven at 356°F for half an hour.
    Remove from oven, transfer your bread loaf to a serving platter, freeing it from the baking paper, and serve immediately, piping hot.
