Ingredients
- 2 cups all-purpose flour
- 2 cups bread flour
- 3/8 cup sugar
- 2 1/4 tsp dry yeast
- 3 eggs
- 3/4 cup milk (+ 1 tbsp)
- 1/3 cup butter
- 1 tbsp honey
- orange zest (grated from one orange)
- 1 pinch salt
Preparation of the Brioche with Tuppo
In a large bowl, mix the flour with the yeast, sugar, and orange zest with a spoon.
Make a well in the center and add the eggs and 3/4 cup of milk, stirring until the mixture is smooth.
Add the honey and salt, and mix again.Transfer to a floured work surface and knead firmly until you get a compact and smooth dough, then incorporate the softened butter in pieces, kneading further to form a smooth dough.
Slightly butter a bowl, place the prepared dough in it, and let it rise covered for a couple of hours, until doubled in size.After this first rising phase, divide the dough into ten parts of about 2.8 oz and another ten of about 0.5 oz.
Shape each part into balls. Press with a finger in the center of the large balls to form a hollow and place the smaller balls in the hollows.
Place the brioche on two baking sheets lined with parchment paper, cover with a clean cloth, and let them rise for another hour.After this rising phase, preheat the oven to 356°F (mode: static).
Brush the surface of the brioche with the remaining egg beaten with a tablespoon of milk and bake them for twenty minutes.
Remove from the oven and let them cool completely before serving.
