Cabbage Soup

Cabbage soup is a delicious comfort food, warm and cozy, easy to prepare.

Ingredients

  • 1 cabbage
  • 3 potatoes
  • 4 1/4 cups vegetable broth
  • 1 carrot
  • 1 stalk celery
  • 1 onion
  • extra virgin olive oil
  • salt

Preparation of Cabbage Soup

  • Clean the cabbage, removing damaged outer leaves and tough parts, including the stem.
    Cut the rest into julienne strips.
    Peel the potatoes and cut them into cubes.
    Peel the carrot and slice it into rounds.

  • Remove the strings from the celery stalk and cut it into chunks.
    Thinly slice the onion.
    Heat some extra virgin olive oil in a saucepan and sauté the onion until golden, then add the carrot, potatoes, and celery and stir to combine flavors.

  • Add a third of the broth and cook for a few minutes before adding the cabbage and the rest of the broth.
    Stir, cover the pot with a lid and cook on medium heat for forty-five minutes.
    Serve your cabbage soup hot.
