Café de Paris Salad

The Café de Paris Salad is a tasty chicken salad created by French chef Paul Bocuse.

Paul Bocuse was the most famous exponent of Nouvelle Cuisine, which he defined as “true cooking,” extremely attentive to the quality of ingredients, with the utmost respect for the original flavor of food, with shortened cooking times, focusing on taste, simplifying and lightening. Three Michelin stars and countless titles, such as Chef of the Century from the Culinary Institute of America in New York in 2011, he is referred to as the father of French gastronomy.

Ingredients

  • 1 chicken breast (whole already boiled: click for the quick and easy recipe)
  • 1 head lettuce
  • 2 eggs (hard-boiled)
  • anchovies in oil
  • green olives (pitted)
  • mayonnaise
  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • salt
  • pepper

Preparing the Café de Paris Salad

  • Take the head of lettuce and remove the outer leaves until only the “heart” remains.
    Wash everything and dry it.
    Prepare an emulsion by whisking in a small bowl six tablespoons of extra virgin olive oil, two tablespoons of white wine vinegar, and a pinch of salt with a fork or a hand whisk.

  • Place the lettuce leaves in a bowl and season them with part of the prepared emulsion (set aside one tablespoon).
    Cut the already boiled chicken breast into very thin slices.
    Arrange the seasoned lettuce leaves on a large serving platter.

  • Distribute the chicken slices over them.
    Cut the hard-boiled eggs into wedges.
    Spread some mayonnaise on the chicken, then add the anchovy fillets, olives, and egg wedges.
    Place the heart of the lettuce in the center of the plate, finish with the reserved emulsion, pepper to taste, and serve your Café de Paris Salad.
