Calabrian Salad

The Calabrian salad is a tasty, spicy cold dish that is easy to make.

The extra touch for this delicious and simple summer salad made with tomatoes, potatoes, and red onion is the addition of fresh chili pepper, a typical feature of Calabrian cuisine, sliced into rings, which gives it an unmistakable and delicious flavor, refreshed by fresh basil leaves and oregano. Perfect for accompanying meat or fish dishes, or to enjoy with slices of homemade bread or on bruschetta, it is easy and quick to prepare, even in advance, keeping it in the refrigerator without dressing it until the moment of serving.

Ingredients

  • 4 tomatoes (red and firm)
  • 2 potatoes
  • 1 red onion
  • 1 chili pepper (fresh)
  • basil
  • oregano
  • extra virgin olive oil
  • salt

Preparation of Calabrian Salad

  • Wash the potatoes and boil them with the skin on in plenty of salted water.
    Drain and let them cool, then peel, cube, and place them in a bowl.

  • Wash the tomatoes, cut them into thin wedges, and add them to the potatoes.
    Slice the onion thinly, slice the fresh chili pepper, and tear the basil leaves.

  • Add everything to the bowl of potatoes and tomatoes, sprinkle with some oregano, and dress with extra virgin olive oil and salt, mixing thoroughly.
    Serve your Calabrian salad immediately, fresh and spicy.
