Cannelloni with Potatoes and Sausage

Ingredients

  • 12 thin fresh pasta sheets
  • 14 oz sausage
  • 2 cups potatoes
  • 5 oz mozzarella cheese
  • 1.3 cups béchamel
  • chopped rosemary
  • parmesan cheese (grated)
  • salt

Preparation of Cannelloni with Potatoes and Sausage

  • Peel the potatoes, cut them into cubes, and place them in a small pot.
    Cover them with water, bring the pot to the heat, and let them cook for about ten minutes from the boiling point.
    Drain them and mash them with a potato masher, collecting the puree in a bowl.
    Adjust the salt and sprinkle with a bit of chopped rosemary.

  • Crumble the sausage and brown it in a non-stick pan on all sides.
    Add it to the potato puree along with 1 cup of béchamel and mix thoroughly.
    Dice the mozzarella cheese.
    Place the fresh pasta sheets on a work surface and put a tablespoon of the sausage and potato mixture and a few mozzarella cubes just above the edge of one of the shorter sides of each rectangle, then roll starting from the filled side of your sheets, to form the cannelloni.

  • Spread two tablespoons of béchamel on the bottom of a baking dish and lay the prepared cannelloni on it.
    Cover them with the remaining béchamel, the rest of the mozzarella cubes, and sprinkle everything with grated parmesan cheese.
    Bake in a preheated static oven at 375°F for about twenty minutes until the desired degree of browning.
