Cart Driver’s Potatoes

Cart Driver’s Potatoes are a tasty side dish that’s easy to make and full of flavor.

Inspired by the cart driver’s pasta, the famous early 20th-century Sicilian first course created by cart drivers, who transported goods for others on their carts, they are made, like the pasta, with simple ingredients like grated cheese and breadcrumbs. The preparation is simple as well, with pan cooking, and the taste is intense and enveloping, making it a perfect side dish to accompany any type of main course, be it meat or fish.

Ingredients

  • 1.5 lbs potatoes
  • 1 oz breadcrumbs
  • 1 oz pecorino (grated)
  • 1 oz grana (grated)
  • 1 clove garlic
  • 2 tbsps white wine vinegar (or apple cider vinegar)
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Cart Driver’s Potatoes

  • Peel the potatoes and cut them into cubes.
    Blanch them for a few minutes in salted boiling water and drain well.
    Mash the garlic.

  • In a non-stick pan, toast the breadcrumbs.
    In a large skillet, heat a drizzle of extra virgin olive oil and sauté the mashed garlic clove.
    Remove the garlic and add the potatoes.

  • Stir to brown them on all sides.
    Deglaze with the vinegar, then turn off the heat and add the grated cheeses, a bit of chopped parsley, and the toasted breadcrumbs.
    Mix thoroughly, adjust the salt, and serve your Cart Driver’s Potatoes.
