Cauliflower Pizza

Cauliflower pizza is a tasty main dish or single-course meal based on vegetables, easy to prepare.

A fake pizza without yeast, which looks like a pizza, but contains cauliflower in the base dough, simply topped with tomato and mozzarella: a dish full of flavor and appealing, which can help even the little ones eat vegetables 😉 Cauliflower is rich in vitamins and antioxidants and is also low in calories.

Ingredients

  • 1 cauliflower
  • 3 eggs
  • 1/3 cup flour
  • 1/3 cup Parmesan cheese (grated)
  • 1 cup tomato purée
  • 1 1/2 cups shredded mozzarella for pizza
  • oregano
  • extra virgin olive oil
  • salt

Preparation of Cauliflower Pizza

  • Clean the cauliflower by removing the outer leaves and separating the florets.
    Rinse them under running water and chop them in a blender, collecting the result in a bowl.
    Add the flour, eggs, grated cheese, and a pinch of salt and mix thoroughly with a spatula until the mixture is homogeneous.

  • Pour the mixture into a cake pan lined with baking paper that you have previously brushed with a little extra virgin olive oil.
    Spread the mixture covering the entire pan and compact it by pressing with the back of a spoon until the surface is even.
    Bake in a preheated static oven at 400°F for half an hour.

  • Meanwhile, put the tomato purée in a bowl and season it with a drizzle of extra virgin olive oil, oregano, and salt.
    After the half-hour of cooking, remove the cake pan from the oven and spread the seasoned purée over the pizza surface, add the shredded mozzarella, and finish with a sprinkle of oregano and a drizzle of extra virgin olive oil.
    Bake for another ten minutes, still at 400°F in static mode, then remove from the oven and serve your cauliflower pizza immediately.
