Chard risotto is a simple and delicate first course made with rice and vegetables, very easy to prepare.

Delicious and perfect for staying in shape, for Sunday lunch, or for a family dinner or with friends, with few, simple ingredients, it is very easy to prepare.

Chard is rich in calcium, for the health of bones and teeth, and vitamin K, which strengthens bones and the nervous system. They contain a large amount of fiber and water, thus improving the feeling of satiety and contain few calories.

Ingredients

  • 1 1/2 cups risotto rice
  • 14 oz chard
  • 4 1/4 cups vegetable broth
  • 1 shallot
  • Parmesan cheese (grated)
  • butter
  • extra virgin olive oil
  • salt

Preparation of Chard Risotto

  • Wash the chard thoroughly under cold running water.
    Remove the thicker stalks and cut the leaves into pieces.
    Let them cook for ten minutes in boiling water.

  • Meanwhile, chop the shallot.
    Heat a drizzle of oil in a pot and sauté the shallot. Add the rice, toast it, and then add a ladle of hot vegetable broth. Let it absorb, then add more hot broth little by little, until the rice is cooked, also adding the chard once it is cooked.

  • When the rice is cooked, adjust the salt, turn off the heat, and stir in butter and Parmesan cheese.
    Serve immediately, piping hot, your chard risotto.
