Cheesy Gnocchi with Provola

Cheesy gnocchi with provola is a tasty baked pasta dish, simple and easy to prepare.

Homemade gnocchi, with your own hands, tasty and soft for which it is good to use yellow-fleshed potatoes, and a simple tomato sauce, and lots of melting provola for a perfect dish for Sunday lunch or a holiday.

Ingredients

  • 2.2 lbs potatoes
  • 2 1/8 cups flour
  • 1 egg
  • 2 cups tomato puree
  • 5.3 oz provola
  • 1 clove garlic
  • extra virgin olive oil
  • salt

Preparation of Cheesy Gnocchi with Provola

  • Place the potatoes in a small pot, cover them with water and cook for twenty-five minutes from boiling.
    Drain, peel, and mash them with a potato masher, collecting the purée in a bowl.
    Add the flour, the egg, and a pinch of salt and knead until you obtain a homogeneous and compact dough.
    Form logs with the dough and cut into pieces to make the gnocchi.

  • In a saucepan, heat a base of extra virgin olive oil and let the peeled garlic clove brown.
    Add the tomato puree, adjust salt, and cook for about twenty minutes, stirring occasionally.
    Cut the provola into cubes.
    Cook the gnocchi in plenty of salted boiling water, draining them as soon as they rise to the surface.

  • Put a little sauce in six bowls.
    Distribute the gnocchi and cover them with plenty of sauce.
    Sprinkle the surface with the provola cubes and place the bowls in a preheated static oven at 356°F for fifteen minutes.
    Serve immediately your cheesy gnocchi with provola.
