Cheesy Pumpkin Meatballs

Cheesy pumpkin meatballs are a delightful main course, appetizer, or side dish that’s easy to make and irresistible.

Fried, or baked if you prefer, they are crispy on the outside, soft on the inside with a gooey and tasty center, making them a perfect autumn dish for any occasion.

Ingredients

  • 12 oz pumpkin flesh
  • 1 cup breadcrumbs (+ additional for coating the meatballs)
  • 1 cup grana cheese (grated)
  • 1.75 oz smoked scamorza cheese
  • 1 egg
  • oil (for frying)
  • salt

Preparing the Cheesy Pumpkin Meatballs

  • Cut the pumpkin flesh into cubes and place it in a large non-stick pan with a couple of tablespoons of water.
    Cover with a lid and cook for ten minutes, until the pumpkin is tender.
    Uncover the pan and remove the cubes with a slotted spoon.

  • Place them in a food processor and blend everything.
    Put the resulting puree in a bowl and add 1 cup of breadcrumbs, the grated grana cheese, the egg, and a pinch of salt, and knead thoroughly.
    Cut the scamorza into cubes.
    Take a handful of mixture enough to form a ball the size of a walnut.

  • Flatten the ball in the palm of your hand, insert a cube of scamorza, and close the mixture around the scamorza, then roll it between your palms to form a meatball.
    Put some breadcrumbs on a plate and roll the meatball in it to coat all sides.
    Form all the meatballs in this way until the prepared mixture is used up.

  • Heat plenty of oil for frying in a high-sided pan and fry the prepared meatballs for a few minutes on each side until golden, then remove them with a slotted spoon to drain the excess oil on kitchen paper or paper towels.
    Serve immediately, piping hot, your cheesy pumpkin meatballs.
