Chicken Bites with Radicchio

Chicken bites with radicchio are a tasty second course, very easy to prepare.

The radicchio is a true ally for health thanks to the presence of antioxidants and vitamins, accompanied by low caloric intake. Chicken breast pairs well with this tasty and irresistible combination.

Ingredients

  • 1.1 lbs chicken breast
  • 1 head radicchio
  • 1 clove garlic
  • 1/4 cup of white wine
  • flour
  • walnut kernels
  • parmesan shavings
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Chicken Bites with Radicchio

  • Cut the chicken breast into chunks and dredge them in flour.
    Clean the radicchio, removing the damaged outer leaves and the core, wash it and cut it into pieces.
    Peel the garlic.

  • Heat a bit of extra virgin olive oil in a large pan.
    Let the garlic clove brown and add the radicchio.
    Stir to flavor it and then add the floured chicken bites.

  • Cook them on all sides, stirring, and then deglaze with the white wine.
    Finish cooking the chicken. Adjust salt and pepper to taste.
    Serve your chicken bites with radicchio hot, sprinkling with parmesan shavings and coarsely chopped walnut kernels as desired.
