Ingredients
- 6 slices chicken breast (thin)
- 5.3 oz mozzarella
- 0.8 cup tomato passata
- 2 eggs
- flour
- breadcrumbs
- oregano
- extra virgin olive oil
- salt
Preparation of Chicken Cutlets Pizzaiola Style
Place some flour on a flat plate.
Beat the two eggs with a pinch of salt in a bowl until you have a homogeneous mixture.
Place the breadcrumbs on another flat plate.Dip the chicken slices first in the flour, then in the beaten eggs, and finally in the breadcrumbs, covering them well on all sides.
Heat plenty of oil in a pan and cook the prepared cutlets for a few minutes on each side, until the breading is golden brown and crispy.
Let them drain the excess oil by placing them on a plate covered with paper towels.
Cut the mozzarella into cubes.Put the tomato passata in a small bowl and season it with a drizzle of extra virgin olive oil and a pinch of salt.
Place the cutlets on a baking sheet lined with parchment paper without overlapping them.
Top them with some tomato passata on the surface, sprinkle with the mozzarella cubes and a sprinkle of oregano.
Cover the baking sheet with a sheet of aluminum foil and let it cook in a preheated static oven at 356°F for ten minutes.
Serve your chicken cutlets pizzaiola style immediately, nice and hot.
