Ingredients

  • 6 slices chicken breast (thin)
  • 5.3 oz mozzarella
  • 0.8 cup tomato passata
  • 2 eggs
  • flour
  • breadcrumbs
  • oregano
  • extra virgin olive oil
  • salt

Preparation of Chicken Cutlets Pizzaiola Style

  • Place some flour on a flat plate.
    Beat the two eggs with a pinch of salt in a bowl until you have a homogeneous mixture.
    Place the breadcrumbs on another flat plate.

  • Dip the chicken slices first in the flour, then in the beaten eggs, and finally in the breadcrumbs, covering them well on all sides.
    Heat plenty of oil in a pan and cook the prepared cutlets for a few minutes on each side, until the breading is golden brown and crispy.
    Let them drain the excess oil by placing them on a plate covered with paper towels.
    Cut the mozzarella into cubes.

  • Put the tomato passata in a small bowl and season it with a drizzle of extra virgin olive oil and a pinch of salt.
    Place the cutlets on a baking sheet lined with parchment paper without overlapping them.
    Top them with some tomato passata on the surface, sprinkle with the mozzarella cubes and a sprinkle of oregano.
    Cover the baking sheet with a sheet of aluminum foil and let it cook in a preheated static oven at 356°F for ten minutes.
    Serve your chicken cutlets pizzaiola style immediately, nice and hot.
